A fizzy drink, made from fermented tea, kombucha has been drunk for thousands of years for its tangy taste and potential health benefits.
In recent years, the popularity of kombucha has surged as more people seek alternatives to alcoholic drinks or soda. Data from Statista projects the global market value for kombucha will rise to $6.14 billion (USD) by 2028, up from $0.6 billion in 2015, making it one of the fastest-growing global food trends.
The secret behind kombucha’s health-promoting properties lies in its fermentation process, which produces probiotics, organic acids, and enzymes that contribute to better gut health and improved insulin sensitivity.
The Fermentation Process
Kombucha is created by fermenting sweetened tea with a symbiotic culture of bacteria and yeast (SCOBY). During fermentation, the yeast breaks down the sugar into alcohol, which is then converted by bacteria into acetic acid and other compounds. This process results in a beverage rich in probiotics, B vitamins, and organic acids like glucuronic acid and lactic acid, which play crucial roles in health.
Vivien Sinka, from KTea Kombucha, a company that brews live kombucha in the Channel Islands, explained the process. “Kombucha cannot contain pathogens because it has a naturally low pH which means we do not need to add any chemical preservatives. During the fermentation stage, the microbes pre-digest the botanicals, making their nutrients absorbable for the body.”
However, not all kombuchas are created equal and it’s important to check that what you are consuming is still ‘live’ if you wish to enjoy any of the health benefits.
Vivien said: “Most commercially made kombuchas have been fast fermented, fine filtered, pasteurised and force carbonated rendering them lifeless. Many are quite high in sugar, made using fruit juices and even sweeteners. Raw/live kombucha like KTea need to be kept chilled so you can look for this indication on the label. A sure sign of aliveness is seeing things floating around, like yeast strands and SCOBYs. We recommend checking the ingredients as good quality raw kombucha should only have a few ingredients; usually green or black tea, unrefined sugar, filtered water, the kombucha culture, and some natural flavourings.”
Gut Microbiome and Health
